Fructose is the sugar contained in fruit, even though it is also found in other foods like honey. Unlike table sugar (saccharose), fructose barely increases insulin, in other words, it does not increases blood sugar levels, hence it's been used as sweetener by diabetics or people overweight for years. Once it's absorbed, fructose moves to the liver, where it is transformed into glucose or stored as glycogen. This major increase of hepatic glycogen along with its absorption by other transporters different from fructose's, make it a very interesting carbohydrate for sportsmen on intensive or long-lasting training session.s.
